Use our smoked haddock, artfully crafted in our Portland facility, for a cozy finnan haddie dish. Using only a few ingredients, this traditional stew comes together for the ultimate winter dish.

INGREDIENTS

Yield: 3 - 4 People

  • 2 cups heavy cream
  • 2 egg yolks
  • 2 fillets of finnan haddie
  • Toasted bread (we love boule)
  • Parsley

PREPARATION

Step 1

Submerge smoked haddock in water and heat until cooked through. Though previously smoked, the haddock must be warmed all the way before consuming.

Step 2

Drain haddock and keep aside.

Step 3

Boil cream and reduce by half, then whisk in egg yolks.

Step 4

Season with cayenne and pour over previously warmed haddock.

Step 5

Serve with toasted bread and parsley.

Step 6

For a chowder experience, add diced potatoes, clam juice, thyme, and sherry.
