Salt & Pepper King Prawns add a kick to these sweet and tender shrimp. Inspired by the Woks of Life, here is our take on a fragrant favorite.

INGREDIENTS

Yield: 4 servings

  • 1 tbs pepper
  • 1/2 tbs salt
  • 1.5lb King Prawns
  • 4 tbs potato starch
  • 1/3 C vegetable oil
  • 6 ea garlic cloves (finely chopped)
  • 1/4 sweet onion (finely sliced)
  • 1 stalk green onion (green stalk only, chopped)
  • 1 small Thai chili or habanero, slivered and seeds removed

PREPARATION

Step 1

Prepare Salt and Pepper Mixture starting on Step 2.

Step 2

Toast pepper until fragrant in a pot, about 10 minutes. Reserve pepper in a bowl.

Step 3

In the previous pot, toast salt until slightly yellow.

Step 4

Let both cool completely, then mortar and pestle or use a spice grinder to make a fine powder. There will be left over for future use.

Step 5

Start preparing the Shrimp

Step 6

Thaw prawns completely, rinse and pat dry.

Step 7

Dredge in potato starch.

Step 8

In a flat bottomed pan (cast iron or Dutch oven), bring oil to 375 F degrees.

Step 9

Fry prawns in batches, 30 seconds on each side. Set prawns on paper towel-lined plate to soak any excess oil.

Step 10

In a wok, heat 2 tablespoons of oil over medium heat.

Step 11

Fry the onion until translucent, add garlic, and then add pepper slivers and green onion.

Step 12

Once all are fragrant, gently toss fried shrimp into wok and sprinkle with a few pinches of salt and pepper mixture to taste.

Plate and enjoy!
