Hawaiian Kanpachi™ is a delicious, high-value yellowtail responsibly cultivated in deep ocean fish ranching. In the wild, this species is referred to as amberjack or kahala. However, while Hawaiian Kanpachi™ may lend itself to amberjack recipes, it is substantially different from its wild counterpart. The controlled farming from hatch-to-harvest, increases the fat content, decreases mercury, and reduces risk of parasites that can afflict these fish in the wild.
Blue Ocean's sustainable "mariculture" allows for year round Hawaiian Kanpachi™, a sushi grade fish with amazing culinary versatility. Fed on a certified, sustainable fish meal and fish oil with no GMOs, these Hawaiian Kanpachi have no antibiotics and are free from selective breeding or genetic modification. Raised in open ocean sea pens, the deep water columns receive wide exposure for water exchange, creating low stock density and promoting greater health among the stock. Also, the mariculture has stringent water quality testing and benthic monitoring to assure minimal environmental impact while meeting Federal, US Fish & Wildlife, and the State of Hawaii standards.
Blue Ocean is one of 12 members of Sea Pact, an organization that will improve the sustainability of global seafood by using the collective power of like-minded North American seafood companies to improve fishing and fish farming systems globally. Notably, Blue Ocean is the only open-ocean finfish farm in the US that not only reduces their footprint, but allows Hawaiian Kanpachi to thrive and grow in an environment that mimics their natural process.
Hawaiian Kanpachi™, served as sashimi, shares similarities to the popular hamachi or hiramasa (yellowtail). Among many factors that determine quality in the discriminating sashimi market, fat content ranks high. Served raw, Hawaiian Kanpachi delights for sashimi, ceviche, and nigiri sushi. With a subtle, pure flavor when cooked, Hawaiian Kanpachi™ also adapts to a variety of culinary styles and preparations, such as seared, sautéed, steamed, broiled or baked, spiced, sauced or dipped.
Hawaiian Kanpachi has great health benefits as a lean protein with omega-3 fatty acids, known to help reduce the rick of high cholesterol, heart disease, and high blood pressure.
