Halibut is a renowned white fish that sets the standard for classic seafood dishes, making it a staple on menus across the country. As the largest flatfish in the world, Atlantic Halibut occupies a unique position at the top of the food chain, feeding on a wide variety of fish and shellfish. This versatile predator thrives in a broad range of depths and locations, contributing to its robust and rich flavor. Its firm, opaque flesh is bright white when cooked, with a buttery flavor that pairs well with various seasonings and cooking methods. Our Gulf of Maine Wild Atlantic Halibut comes from a responsibly managed, local fishery, endorsed by both the National Marine Fisheries Service and the Maine Department of Marine Resources. This sustainable program is part of ongoing research into Atlantic Halibut populations, with Browne Trading supporting this effort by helping to track fish size and weight during the open season, which runs from May 1 to July 31. Fishermen participating in this research are limited to harvesting up to 25 fish per season, with each fish tagged to ensure traceability. Under Maine State regulations, Halibut must meet a minimum length of 41 inches (from the pectoral fin to the tip of the tail) before they can be sold commercially. Outside of the open season, only one fish per vessel per day is allowed to be caught, with all fishing conducted using circle hooks, reducing injury to undersized fish and improving the overall health of the fishery.

The Halibut we source is caught primarily by day boat fishermen using small-scale long lines or trawls with a maximum of 450 hooks. Fresh herring is used as the preferred bait, and the use of circle hooks ensures a safe catch, as the fish are typically hooked in the mouth rather than the gut. This careful fishing method results in a superior product, often delivered to chefs within 24 hours of being landed.

The average weight of these fish ranges from 25 to 50 pounds, making them a substantial and high-quality offering. Halibut is not only a culinary favorite for its firm texture and delicate buttery flavor but also for its ability to take on a variety of preparations, making it a perfect addition to both casual and fine dining menus.
