Marinated Anchovy Hors D’oeuvre

Need a light hors d’oeuvre for your next gathering? Our Marinated Anchovies star on this cracker. Don’t be afraid of packaged anchovies; they’re a punch of pure umami, brightened up here by the fresh gem lettuce and tangy slice of pickled red onion. The smoky swipe of harissa spiced mayo adds depth and extra flavor.
INGREDIENTS
Yield: 2 servings
- Marinated White Anchovies
- Thin baked crackers
- ½ C Mayonnaise
- 1 tsp harissa paste – adjust to taste
- Little gem lettuce
- Pickled red onions – storebought, or follow directions below to make a quick batch.
PREPARATION
Step 1
If you need to pickle your red onions, complete the following. Otherwise, proceed to step 2. Start by peeling and very thinly slicing 1 red onion. In a small saucepan, combine ¾ C of apple cider vinegar, ¼ C water, 1 tsp salt and 1–2 tbsp of a sweetener such as maple syrup, honey or sugar. Cook the mixture over medium high heat until it reaches a simmer. Put the onions in a jar, and cover with the vinegar mixture. Cover and set aside for 30 minutes.
Step 2
Combine the mayonnaise and harissa paste in a small bowl. Once evenly mixed, spread 1-2 tsp on each cracker.
Step 3
Wash and dry your little gem lettuce, and then press 1 leaf onto each cracker.
Step 4
Place two fillets of marinated anchovies into each cup of lettuce, and then garnish with a small slice of red onion.
