Buckwheat Waffles with Maple-Blood Orange Cream & Siberian Caviar

INGREDIENTS

Yield: 8 servings

  • 1 C Buckwheat flour
  • ½ tsp kosher salt
  • 1 ¼ tsp baking powder
  • 1 tsp baking soda
  • 1 buttermilk
  • 3 tbsp crĆØme fraiche
  • 2 tsp sugar
  • 1 whole large egg, separated
  • 4 tbsp melted butter
  • Maple-Blood Orange Cream Ingredients:
  • 3 Tbsp Maine Maple Syrup
  • ½ C CrĆØme Fraiche
  • 1 ea Blood Orange
  • Garnish:
  • 125g Siberian Caviar

PREPARATION

Step 1

Preheat a waffle iron to 375 degrees

Step 2

In a medium mixing bowl combine flour, salt, sugar, baking powder, baking soda, and sugar. Whisk to combine.

Step 3

In another bowl, combine buttermilk, crĆØme fraiche, egg yolk, and melted butter.

Step 4

Add wet ingredients to dry and gently whisk to combine.

Step 5

Whip egg white into stiff white peaks, and using a spatula, gently fold in the waffle batter.

Step 6

Let the batter rest for five to ten minutes.

Step 7

Combine maple syrup, crĆØme fraiche and add the blood orange zest, keep at room temperature until ready to serve.

Step 8

Cook waffles according to waffle maker’s directions.

Step 9

Glaze each waffle with maple-blood orange crĆØme fraiche and siberian caviar.
