Buckwheat Waffles with Maple-Blood Orange Cream & Siberian Caviar

INGREDIENTS
Yield: 8 servings
- 1 C Buckwheat flour
- ½ tsp kosher salt
- 1 ¼ tsp baking powder
- 1 tsp baking soda
- 1 buttermilk
- 3 tbsp crème fraiche
- 2 tsp sugar
- 1 whole large egg, separated
- 4 tbsp melted butter
- Maple-Blood Orange Cream Ingredients:
- 3 Tbsp Maine Maple Syrup
- ½ C Crème Fraiche
- 1 ea Blood Orange
- Garnish:
- 125g Siberian Caviar
PREPARATION
Step 1
Preheat a waffle iron to 375 degrees
Step 2
In a medium mixing bowl combine flour, salt, sugar, baking powder, baking soda, and sugar. Whisk to combine.
Step 3
In another bowl, combine buttermilk, crème fraiche, egg yolk, and melted butter.
Step 4
Add wet ingredients to dry and gently whisk to combine.
Step 5
Whip egg white into stiff white peaks, and using a spatula, gently fold in the waffle batter.
Step 6
Let the batter rest for five to ten minutes.
Step 7
Combine maple syrup, crème fraiche and add the blood orange zest, keep at room temperature until ready to serve.
Step 8
Cook waffles according to waffle maker’s directions.
Step 9
Glaze each waffle with maple-blood orange crème fraiche and siberian caviar.
