Gambas prawns live in the Mediterranean off the coast of northern Spain, most commonly harvested in the town of Palamós. These large prawns are similar to Spain’s “carabineros” red prawns, however, gambas bear a more subtle pearly red color and have a more delicate and sweet, almost vanilla, taste.

99% of the Gambas available in the US are fished in Africa, but you can trust Browne Trading’s Gambas as a real, 100% Spanish seafood as they bear the “Gamba de Palamós” seal, which certifies their origin from the Palamós fishing ground. This seal also ensures the prawns meet rigorous quality requirements, observed from harvest through the entire production chain. The seal was created in 2007 to enhance consumer trust and protect one of the most cherished natural resources of the Costa Brava coast.

Gambas can be eaten raw, with salt and a drop of olive oil. But the iodized flavors of the sea are concentrated miraculously in their head, a delicious, natural bisque which can be sucked out between your two fingers or with the help of a straw.
