Our hamachi—also known as yellowtail or young amberjack—is raised in calm, stress-free waters and dispatched using Ike Jime, a precise Japanese method that enhances color, texture, and shelf life. Celebrated for its rich oil content, it offers a smooth, buttery texture and clean, refined flavor.
Used by top sushi chefs across the U.S., it’s also versatile enough to sauté, steam, or grill to medium-rare, and makes an excellent substitute for swordfish or kanpachi. The Ike Jime process removes 99.5% of blood within minutes, preventing lactic acid buildup and preserving the pristine taste and exceptional quality that define Browne Trading standards.

Shipping Information
All orders are shipped via UPS Next Day Air. If a future delivery date is chosen, your order will ship the day before the selected date. If an order is placed after cutoff (2pm ET), your order will ship the next available shipping day. For example, orders placed after 2pm ET on Thursday will ship on the following Monday for Tuesday delivery. Our shipping department is closed Friday-Sunday. We do not offer Saturday or Monday delivery.
