How to Make Caviar Butter

Everyone is talking about caviar butter. But the question is, how to make caviar butter? Using only two ingredients, it is super easy to make!
PREPARATION
Step 1
Season steak with salt and pepper. Sear in a hot pan with canola oil or butter on each side until cooked to your liking. Once done, set aside to rest.
Step 2
Melt remaining butter in a small saucepan on medium heat. Add shallots, tarragon, and salt and steep for 5 minutes. Discard the sprigs.
Step 3
Put white wine vinegar, lemon juice, and egg yolks in a blender, blend until smooth for a few seconds. Slowly pour hot butter into running blender.
Step 4
Combine crabmeat with bearnaise sauce in a saucepan to warm on low heat. Pour over medium rare beef tenderloin.
Step 5
Be very careful not to break the pearls of the yolks will be mushy.
Step 6
Spread on crostini, crackers, french fries, or roaster potatoes.
