Scallop Crudo with Maine Garum Fish Sauce

Maine scallops are some of the best in the world thanks to the clean and cold waters. We wanted to showcase them even more with our special Maine Garum Fish Sauce - mentioned in The New Yorker's 2025 Holiday Gift Guide! Made out of trim and bones and turning into "liquid bronze", this sustainable sauce is your next go-to pantry item.
INGREDIENTS
Yield: 4 servings
- 1 pound Maine scallops
- Salt
- 8 chives
- ½ shallot
- 5 cilantro stems
- Juice of 1 lime
- Olive oil
- Maine Garum Fish Sauce
- Shredded coconut
PREPARATION
Step 1
Use any scallops from Browne Trading Company. All of our scallops—including Nantucket, diver, domestics, and Hokkaidos—can be consumed raw.
Step 2
Finely chop chives, shallots, and cilantro stems.
Step 3
Combine the chopped medley with salt, lime juice, and olive oil on the scallops.
Step 4
Drizzle with Maine Garum Fish Sauce and mix again.
Step 5
Plate and finish with shredded fresh coconut.
