Bluefin Tuna Tartare

INGREDIENTS
Yield: 4 servings
- 2 ¼ cup short grain rice
- ½ cup sweet chili sauce
- ½ cup soy sauce
- ¼ cup mirin
- 4 tbsp togarashi
- 4 tbsp chili crisp
- 4 ounces bluefin tuna
- 1 ounce kimchi
- 1 ounce wakame salad
- 1 ounce pickled ginger
- Scallions
PREPARATION
Step 1
Rinse rice and soak in water for 30 minutes. Cook until done.
Step 2
In a medium bowl, mix 8 ounces of cooked rice with togarashi, mirin, and chili crisp. Set aside.
Step 3
Dice bluefin into small cubes. Mix tuna with spiced rice and kimchi. Garnish with wakame salad, pickled ginger, and scallions.
