Harvested from depths of nearly 700 meters, Gambero Rosso Prawns thrive in powerful ocean currents that contribute to its exceptional purity and clean, refined character. Prized for its vivid flavor, this deep-sea prawn offers an intense profile balanced by delicate sweetness and subtle smoky notes.
From May through September, females carry roe, visible as dark markings on the head—the deeper the color, the more developed the eggs. During this seasonal peak, the prawns take on an even sweeter flavor and a firm, cohesive texture that holds beautifully when sliced, making them particularly desirable for raw preparations. For heated preparations, see our recipes for inspiration.
