Limited Edition Dry-Aged Toro
Holiday ordering!
We highly recommend scheduling fresh seafood orders to deliver the third week of December to avoid transit delays. Fresh seafood keeps 5-7 days when stored properly.
Approx. 1 pound toro. Dry-aged.
For the real foodies, this one is for you. We took our sushi-grade, fresh bluefin tuna toro and placed it in our dry ager for 10-14 days. What comes out? Clean, concentrated toro flavor, similar to a dry-aged steak. Please note, color can widely vary on dry-aged cuts.
Bluefin tuna is the fattiest and largest in the tuna family, making this fish truly iconic. You can expect lighter toned meat with plenty of rich texture. In the summer, we only purchase fish that are responsibly caught by line and harpoon in our local Maine and Nova Scotia waters, harvested under strict quota regulations. Every tuna we purchase is graded on-site to confirm its quality rating using a sashibo (a Japanese-made sharp metal probe that removes a thin core from the fish) to evaluate the meat for color, visible fat content, and texture.
This fish is the perfect choice for sashimi at home or seared on on the grill. Atlantic Bluefin Toro tastes and cooks similarly to a fatty steak. Check our Tuna Crostini recipe for additional inspiration.
