Belgian Waffle Toasts with Maine Uni and Belgian Platinum Caviar

In celebration of Maine uni season starting back up, we are featuring these autumn flavors with Belgian caviar and a Belgian waffle. Try this plating for your next dinner party appetizers.
INGREDIENTS
Yield: Appetizers for 4 people
- 1 Belgian waffle
- 4 tbsp unsalted butter
- 1 tsp maple syrup
- 4 ounces crème fraîche
- 5 sprigs of chives
- 6 uni tongues
- 50 grams of Royal Belgian Platinum caviar
PREPARATION
Step 1
Make or purchase your preferred waffles.
Step 2
Melt butter in a skillet until sizzling and fry the waffle pieces on both sides until golden and warm. Remove from the pan.
Step 3
Fold a small drizzle of maple syrup into crème fraîche until smooth.
Step 4
Dip one side of each waffle piece into the maple crème fraîche, then press into finely chopped chives.
Step 5
Lay each waffle piece flat and pipe a small square of crème fraîche onto one section.
Step 6
Top the piped crème fraîche with a single tongue of uni.
Step 7
Place a quenelle of Royal Belgian Platinum caviar in the adjacent square.
