  • Taste: oceanic, briny
  • Color: white-gold to canary yellow
  • Pearl Size: medium (1.8-2.1mm)
  • Texture: delicate
  • Country of Origin: Belgium
  • Species: Albino White Sterlet Sturgeon (Acipenser ruthenus)

Royal Belgian White Pearl Caviar is among the rarest caviars on the market. Harvested exclusively from albino sterlet sturgeon, this extraordinary selection is produced in extremely limited quantities, making it a true showstopper. Its striking pearls range in color from pale ivory to vibrant canary yellow, offering a stunning departure from traditional dark caviar.

Beyond its remarkable appearance, White Pearl Caviar delivers a pronounced, rich flavor with a smooth, elegant finish. The delicate pearls are slightly smaller than those of its Caspian relative, the osetra sturgeon, making this rare selection as distinctive in texture as it is in appearance.

How to Store Caviar

Sturgeon caviar remains fresh in your refrigerator, unopened, for 4-6 weeks.

Tobikkos, salmon roe, and sea trout roe should be stored frozen.

Crucially, once opened, we recommend consuming within three days.
