Our Scotch Smoked Salmon - 8 Ounce retail pack is back! Thank you for your patience as we restocked our world famous salmon. It has been a long time coming.
For those that need a refreshing, we had an electrical fire on April 16th, 2020. Mind you, this was a few short weeks after adjusting for covid demand. Luckily, no one was hurt and our coveted caviar and products were safe in the coolers. However, our smoke room received the most damage. It took over a year for our state-of-the-art smoker to be specially built in Europe, which had many pauses due to local pandemic regulation shutdowns. Then it took over a month to ship by boat. After finally arriving to Portland in December 2021, we completed construction around the smoker, passed inspection, and finished test batches. Almost two years later, Scotch Smoked Salmon is here!
Browne Trading utilizes fresh, farmed Atlantic salmon, sugar, sea salt, and pure scotch whiskey over hickory and applewood smoking. In addition to our high quality ingredients, we attribute the amazing flavor, texture, and color to the cold smoke process. Cold smoking refers to a lower temperature and longer smoke. You'll find that this process creates a well-balanced, luscious, and bright smoked salmon.

We make all of our Scotch Smoked Salmon in our boutique smokehouse, located in Portland, ME. Our smokemaster cures, brines, smokes, skins, and packages by hand in small batches for high quality and consistently outstanding smoked salmon.
Did you know that smoked fish has a long shelf life? Sealed smoked fish lasts several weeks in the fridge and frozen smoked fish lasts a few months!
