Firm, rich, sweet, and tangy, this offering from Espinaler captures the magic of Galician mussels in their iconic escabeche sauce. The smaller size of these mussels allows them to fully absorb the vibrant pickled marinade, resulting in an especially насыщенный (deeply infused) and flavorful bite.
Like all Espinaler conservas, they shine simply served over warm toast, but also lend themselves beautifully to more composed dishes—try folding them into squid ink vermicelli with minced shallots, garlic, and butter for an easy, elevated pasta.
