Please welcome this iconic Japanese fish to our dry-aging program: Madai. What many associate with snapper is actually a sea bream fish. Whatever you want to call it, make sure you give this dry-aged version a taste. We receive the whole fish fresh from Japan, then scale, gut, and clean them before hanging in our boutique dry-aging cabinet for 7 days. Its firm flesh is transformed by the aging process, becoming luxuriously tender and rich. 

We recommend letting Dry-Aged Madai shine on its own - serve it raw as sashimi, dressed with just a drizzle of shirodashi and a touch of flaky salt.

Shipping Information

All orders are shipped via UPS Next Day Air. If a future delivery date is chosen, your order will ship the day before the selected date. If an order is placed after cutoff (2pm ET), your order will ship the next available shipping day. For example, orders placed after 2pm ET on Thursday will ship on the following Monday for Tuesday delivery.  Our shipping department is closed Friday-Sunday.  We do not offer Saturday or Monday delivery.
