A prized cut in Japanese cuisine, bluefin tuna collar—known as kama—offers some of the richest, most flavorful meat on the fish. Cut from the area just behind the gills and pectoral fins, the collar develops exceptional marbling that bastes itself as it cooks, resulting in succulent, buttery meat with deep umami character and crisp, caramelized edges.

Our Maine Bluefin Tuna Collar is sourced from responsibly managed Atlantic bluefin tuna harvested off the coast of Maine. Each fish is carefully handled to preserve its pristine quality before the collars are expertly trimmed and frozen to lock in freshness.

Whether grilled over charcoal, roasted in the oven, or broiled under high heat, bluefin kama is a favorite among chefs and seafood enthusiasts alike for its dramatic presentation and extraordinary eating experience.

Shipping Information

All orders are shipped via UPS Next Day Air. If a future delivery date is chosen, your order will ship the day before the selected date. If an order is placed after cutoff (2pm ET), your order will ship the next available shipping day. For example, orders placed after 2pm ET on Thursday will ship on the following Monday for Tuesday delivery.  Our shipping department is closed Friday-Sunday.  We do not offer Saturday or Monday delivery.

Many of our selections arrive multiple times a week, if not daily, ensuring the freshest quality.
