If you cannot get to Spain, Conservas de Cambados offer a quintessential Galician experience in this tin: Percebes in their brine.
Percebes are a species of barnacles that grow in cold water along tidal rocks. Harvesting them is a difficult and dangerous feat: while some barnacles can be stripped from the rocks by hand during low tide, others require a diver armed with a pry bar. Depending on availability, we also offer live Percebes sourced from the Iberian Peninsula.
Conservas de Cambados Percebes are hand harvested and packed whole in brine. You can expect a flavor and texture reminiscent of razor clams. They are not shucked prior to packing, so have a seafood fork on hand to extract the meat, and a glass of wine to go with it.
The riches of Northern Spain are not monetary; the real treasures lie in the surrounding seas. Since 1985, Conservas de Cambados has operated their own cannery in Galicia where the Pontevedra river meets the Ria de Arousa estuary. This estuary is the largest in Galicia and ideal for bivalves and cephalopods. With practices that set the artisanal standard, and being mindful of long term sustainability, Conservas de Cambados honors the traditions of both kitchen and sea. We love the brand's signature netting.
