Angulas are one of the supreme seafood delicacies of Spain. These mild, tender baby eels are harvested by net from the streams of northern Spain, then carefully cooked in olive oil with a touch of cayenne to preserve their delicate flavor and texture.

To enjoy angulas uber-traditionally, heat them in a terra cotta cazuela over low heat. Alternatively, place the unopened tin in a hot water bath. Serve with crusty bread and a crisp glass of Albariño wine from Galicia.
