Otherwise known as White Trevally, Striped Jack or Striped Horse Mackerel, we love Shima Aji for its fresh flavor. Shima Aji has tender, white to pinkish flesh with just a bit of fat, and is considered an ideal and luxurious fish for sushi and sashimi. Browne Trading’s partners utilize the cho-rei-kun technique when raising and harvesting their Shima Aji, which minimizes stress for the fish, ensuring optimal flavor and better yield.
We specially scale, gut, and clean the fish before dry-aging for 14 days on-site. The result? Deeper flavor, firmer, buttery texture, and pure umami. We recommend letting the fish shine on its own - serve crudo sliced with a delicate drizzle of shirodashi and a touch of flaky salt.

Shipping Information
All orders are shipped via UPS Next Day Air. If a future delivery date is chosen, your order will ship the day before the selected date. If an order is placed after cutoff (2pm ET), your order will ship the next available shipping day. For example, orders placed after 2pm ET on Thursday will ship on the following Monday for Tuesday delivery. Our shipping department is closed Friday-Sunday. We do not offer Saturday or Monday delivery.
