Award-winning and used by top chefs around the world, our bottarga is wild-caught, harvested, produced, and packed in Florida by Cortez Conserva, who has been family-operated since 2007. Each roe is carefully harvested, cleaned, salted, and dried, taking over a week to produce from start to finish…all by hand. They are the first in the US to produce this umami rich and extremely healthy delicacy. The goal of making the freshest and cleanest bottarga in the world while preserving authentic Gulf Coast heritage seafood!
How to Use Bottarga
- Finely Grated - over grilled vegetables like zucchini, pepper, potatoes or over eggs with pickled chilis.
- Grated - served on al dente pasta with lemon zest and breadcrumbs or mixed into an aioli for salad dressing.
- Thinly Sliced - raw on salad with fennel, lemon, and celery.
Mullet Bottarga is a fresh product that should be stored under refrigeration. Once cut, wrap tightly in plastic wrap and store in the refrigerator. Product lasts for months with proper storage.
Shipping Information
All orders are shipped via UPS Next Day Air. If a future delivery date is chosen, your order will ship the day before the selected date. If an order is placed after cutoff (2pm ET), your order will ship the next available shipping day. For example, orders placed after 2pm ET on Thursday will ship on the following Monday for Tuesday delivery. Our shipping department is closed Friday-Sunday. We do not offer Saturday or Monday delivery.
