Each order includes two fresh, sushi-grade sablefish fillets weighing approximately 1.5 pounds total.\u003c\/p\u003e\n\u003cp\u003eSablefish already boasts luscious, velvety white fillets. Its naturally high healthy fats make it particularly well suited to dry aging. Over 10 days in our temperature- and humidity-controlled aging chamber,\u003cbr\u003ethe fats become cleaner and deeper. Its texture firms, and pure umami flavor develops.\u003c\/p\u003e\n\u003cp\u003eSablefish, also known as “black cod”, “Alaska cod”, or even “butterfish”, is not actually a member of the cod family, nor a true butterfish. Our Sablefish comes from the premium Golden Eagle Sablefish aquaculture. Through a partnership with members of the Kyuquot-Checleseht First Nation, fish are raised there in low density pens in the deep, cold waters of Kyuquot Sound on Vancouver Island’s west coast.\u003c\/p\u003e\n\u003cp\u003eOur dry-aged version is exceptionally versatile: let it shine served raw with a delicate drizzle of shirodashi and a touch of flaky salt, or add a kiss of heat from the grill.
